Sample Menu

Chicken

  • Honey Ginger Roast Chicken- Whole chicken marinated in soy, ginger, garlic, and honey. Roasted until tender and juicy on the inside, caramel and crisp on the outside.
  • Chicken Chili with Basil- All natural juicy chunks of chicken in a tomato based chili with red peppers and basil.
  • Butter Chicken Masala with Cashews- boneless, skinless pieces of chicken breast marinated in yogurt, spices and lemon. Roasted and then combined in a creamy curry sauce with a garnish of toasted cashews
  • Chicken Paillards with White Wine and Artichokes- boneless skinless chicken breast pounded thin and sautéed with pieces of artichoke hearts in a lemony white wine sauce.

Beef/Lamb/Pork

  • Seared Filet of Beef with Rosemary Madeira Sauce- Filet mignon steaks that are seared and served in a Madeira sauce with a hint of rosemary and finished with cream.
  • Sticky Gingered Beef- Tender pieces of beef, stir fried with lots of garlic and ginger. Combined with asparagus and red pepper in a slightly sweet hoisin reduction.
  • Plum Stuffed Pork Tenderloin with Port Thyme Reduction- Lean pork tenderloins, stuffed with a macerated dried plums and port. Seared and finished in the oven with a reduction of port and fresh thyme
  • Pistachio Crusted Rack of Lamb- Pistachios and seasoned panko breadcrumbs are coating a rack of lamb that is roasted until perfect!

Seafood

  • Honey Pecan Salmon- Toasted pecans chopped with honey, garlic, seasonings and topped on a boneless, skinless fresh salmon filet.
  • Spicy Singapore Shrimp over Spinach- Big juicy shrimp stir fried with red pepper and a host of Asian spices to be served over a bed of wilted spinach.
  • Corn, Crab and Prawn Chowder- The ultimate in comfort food, creamy corn chowder base with bacon combined with lump crab meat and big shrimp with a garnish of cilantro.
  • Enchiladas de Mar- Crab meat and scallops combined in a creamy enchilada filling with a light topping of salsa verde and cheese.

Vegetarian

  • Vegetable Morrocan Stew with Chickpeas- a flavorful mix of veggies combined with traditional Moroccan seasonings simmered in a light veggie broth with chick peas.
  • Grilled Vegetable Ratatouille with Grilled Polenta- Marinated veggies grilled until lightly charred for depth of flavor, then sautéed with fresh garlic and a balsamic vinegar reduction. Finished with fresh basil.
